Naples 1889

Raffaele Esposito, naples' most revered pizzaioli (pizza chef) was invited to present his culinary skills at the royal palace of king umberto and queen margherita.

In honour of italy, he created a pizza in the colours of its national flag; red, green and white - tomato, basil and mozzarella. IN honour of the queen he named it the margherita.

This pizza set the standard from which today's pizza has evolved.
